My favorite new tuesday night tv shows

I don't even know what to say about this show, a beautiful self-indulgent young lady seeks help to be liked by others from a liked and somewhat closed off co-worker. Selfie...  is just hilarious and a perfect comic couple.
I love the fact that you can listen to their thoughts while they are trying to figure out their relationship...It's so cute and funny


My easy Pancit recipe

I was so happy to hear that my friend cooked my recipe from my last post chicken pot pie, she asked me if I could post another recipe.  So I thought about Pancit, I cooked that this weekend for my daughter's 20th birthday dinner. I had help on this one from my sis in law and I want to apologize to her before hand, I probably changed the recipe a lot. After cooking for my family for 22 yrs. I am now trying to find fast and simple ways to cook. My beautiful sister in law is Filipino and introduced this dish to us many years ago, her and my brother would cook lumpias on the side with this dish. I just served ready cooked egg rolls on the side. I love the meaning behind Pancit, which is Good Luck and Long Life and I thought it would be perfect for my daughter's dinner. Don't forget to have your favorite sauces on the side like sweet and sour sauce. I hope you enjoy this recipe.

Ingredients:
1 bag of Rice Noodles
1 cup of sliced celery
1 cup of shredded carrots
2 cups of diced chicken breast
2 cups of small cooked frozen shrimp ( fresh and large shrimp will do, just cook and set aside first)
Soy and Oyster Sauce ( there is a pancit seasoning packet you can use, have to buy at a Asian store)

( you can add snapped peas and shredded cabbage and other veggies, since I was making it for my daughter I did not add to many veggies)

I boiled water and took it off the stove and let the noodles soak until they were soft, I then drained and set them aside
I used soy and oyster sauce until I got the desired taste.

added the shrimp to veggies for a couple of minutes and then added the chicken

added the drained noodles and soy and oyster sauce til I got the desired taste

I quadrupled the recipe to fill 2 of these containers. I served with egg rolls and it was a delicious dinner.

My quick and easy chicken pot pie

I love the fall and making warm dinners, this chicken pot pie is one of my family's favorite and it only has 4 ingredients (excluding salt and pepper).

Skinless chicken breast
2 potatoes (cooked)
1 1/2 cups of frozen peas and carrots
1 can of cream of chicken

Pre heat oven to 375, I diced the chicken and then cooked them in a pan with oil, while that is cooking I dice the potatoes and then cook them in the microwave.
When the chicken is cooked I add the veggies ,potatoes and cream of chicken with one can of water to the pan. I stir all that together and add salt and pepper to taste. While that is cooking I line the bottom of the pie pan with the pie crust. I then add the chicken mixture into the pie crust and then lay the top layer of pie crust. I did cut slits to the top of the pie crust. Now all you have to do is bake until golden brown. I had a little chicken mixture left so I took out a can of biscuits and made those little chicken pot pies which came out delicious.

I have always liked to read, I first started off reading books from Danielle Steel and then I moved on to James Patterson. I was literally going down the list of books that they have published.
I was looking at the diverse list of books my sister was reading and I decided I needed to broaden my mind.
My sister posted on her Facebook page that she was reading "Gone Girl' so I told her that I downloaded it. I had already known that she was close to the end of the book, my sis can read books in 3 days. I on the other hand will need the whole month, because I am a tv show freak. Anyway, my sister's husband mentioned that we should start a book club and then we ran with it. We decided to add the wine because that is something that my 2 sisters were interested in and they introduced me to.... Moscato.
I love the sweetness of Moscato wine, but wine is another thing I need to open my mind to. All I know about wine is there is a red, white, sweet, dry, spicy, cheap and pricey.
I know the real reason I want this book club to succeed and that is.... I enjoy time with my sisters.
When we are together, (which is not very often)  we laugh our heads off.   That is the reason I used the word "Wacky", I want us to have fun, talk about the books that we will be reading and introduce a wine to the group once a month.  I created a Facebook group page for us and for group members, the page is for fun, information and a way of communicating to those members that can't make it out to a get together.
I have to admit that it is also something that is a little bit mine, something to do to change up my day to day routine. It's something to do with my sisters that shares our 2 interest . I can't wait for our first gathering because " Gone Girl" is a good book so far and I can't wait to listen to what others think about it. So I raise my glass to the Wacky Women, Wine and Books Club and I hope it's as enjoyable as I picture it will be.

Top Chef - Duels left me hungry and talking to myself

I watch a lot of television shows, some may say, " way to many".  I missed last nights Top Chef Duels , so since I recorded it I had the chance to watch it today with the hubby . The duel between these two chefs Art Smith who cooks classic southern cooking and Kevin Gillespie a modern southern chef, left me walking away from the tv talking to myself.
It has been a long time since I watched two chefs cook with so much respect for one another, I understood why Curtis Stone kept using the term southern gentlemen when he referred to them. I noticed in all Kevin's plates they had a light and airiness to them, they did not seem as heavy as Art's plates. Don't even get me started on Art Smith's cooking, his love for food and family just shows on his plates. I have never had chicken and dumplings but I literally wanted to jump in the bowl. It has been said many times that Art Smith makes the best fried chicken, well I now have added tasting Art Smith's fried chicken to my bucket list. I don't even have a bucket list so that is the first thing I am adding. He also made this 12 layer cake that his grandmother use to make, his grandmother would say that this cake could cure a heartbreak. The layers were 1/2 a inch thick and each of them covered in melted chocolate, I seriously noticed the judges eyes roll back and moan.
Kevin made these 2 plates that I still picture in my head but they were so modern that I can't find a way to describe them. The one that stuck in my head is his banana pudding that Art said," tasted like a piece of heaven". It was also a plate by his grandmother, she passed away while he was young so the recipe was not left behind. Kevin said that the reason he remembers her banana pudding was because he once ate the whole bowl. I could just tell by the way Kevin cooks that he puts his heart and soul into his plates and that he meticulously chooses his ingredients.
Well as you can tell, I enjoyed last nights duel. I walked away from the couch and said out loud, 
" that was good" like if I ate the plates myself.
