Why am I having a hard time teaching my youngest to drive?

 I have been wanting to write a blog about teaching my youngest to drive for awhile now. I finally have the courage,  I have to start out by letting you know that I did teach my oldest to drive before her 16th birthday. So, why is this time different?
I don't know if it's because I was 35 at the time or that my 16 yr. old was a determined little bug. I have to admit my youngest daughter is not a bad driver, the problem lies within me. I don't think it's the letting go part, because I want her to take the wheel and be independent. I am fearful of the other drivers and if I had super powers I would put barriers around all my girls vehicles and protect them from other reckless drivers.
I hate to blame everything on life after 40, I just know how different I am about a lot of things these days.  I use to have patience and I didn't feel so stressed out, so imagine me now teaching my 20 yr. old how to drive. As soon as she ask if she could drive, I suddenly freak out. I can just feel my heart beating rapidly, I position myself in a defensive way on the passengers seat and feel like I am on alert. I know she feels it and she tells me that I would be the reason if she had a accident. So what should I do? At times I just want to lie down in the back seat and tell her just to get us from point A to point B, have a large glass of wine before we leave or take a anxiety ( Happy ) pill so I would not add pressure to her when she is driving. I need to be supportive and a teacher to my daughter so why can't I just give her the keys and total control of the truck. I need to make her feel independent, strong and ready to take on life's challenges

My Favorite Winter Haircolors

 I thought I would share some of my favorite colors for winter.



 Blondes... I feel blondes should be a little darker during the winter time, you could use Tan Blonde, Caramels and Butterscotch. Adding Lo- lites  could also make a big difference to a blonde color.

 
 
 
 
 
 

 
This is the time if you want to be daring and carefree you can add some color to your hair. Adding blue, red or any color of your choice, you could add the color in chunks, highlights or just peek a boos ( adding the color in your nape area or crown area).






 

Brunettes are my favorites... This is the time to use colors like Dark brown, Chocolate brown and Mocha












 Winter is my favorite time for Red hair colors. Don't be afraid to use Intense Red, Violets, Cinnamon and Mahogany

This is what the inside of my head feels like most of the time. I usually just take a Advil to help with all the pressure I feel in back of my neck.
Yesterday, while I was shopping I noticed a change in my mood and I started letting things get to me. I felt frustration while I was reading the prices from some of the items I was purchasing. When did eggs start being priced over $5.00 and I think it was when I saw the trash bags priced a little over $7 for 30-40 kitchen bags that freaked me out. I remember them priced about $3-$4, I mean I can buy a 150 bags at Sam's Club for around $10. I then went to the register and stood in line and I could feel my heartbeat race and my left hand starting to shake. I stood there and thought I was going to freak out. It wasn't just because of  the total that was going to come from my basket, mentally I prepare myself knowing that every time  I have to go grocery shopping I always total $100-$150 and sometimes that's not even buying meats. I looked at my daughter and then noticed I had a bottle of wine in the middle of all the groceries, I then realized I was going to be all right.
I am not new to a panic attack, I think it was about 14 yrs. ago I experienced something that scared me. It was around the time I had lost my grandmother (dad's mom), at that time she was my closest best friend. I also had not spoken to my mother in over a month or so ( knowing my mom and myself it was probably over something petty). I also remember feeling overwhelmed and smothered, I am pretty sure I also lost a pet at that time.
Anyway, I remember the day like it was yesterday. I was washing clothes and I was walking into my laundry room. I stepped onto the one step I have and I couldn't breath, I could not move and the inside of me felt like I wanted to scream and cry but I had no voice and no tears. I don't recall how long I stood there but it felt like a lifetime.
At my Dr.'s appointment I mentioned what had happened and he told me I had a anxiety/panic attack and prescribed pills. The funny thing was I just kept thinking of all the negatives of taking anxiety pills that I was to scared to take them. Well, as long as I can I am going to try to prolong the use of anxiety pills and have all my loved ones help keep my little wine cabinet stocked.

My favorite new tuesday night tv shows

I don't even know what to say about this show, a beautiful self-indulgent young lady seeks help to be liked by others from a liked and somewhat closed off co-worker. Selfie...  is just hilarious and a perfect comic couple.
I love the fact that you can listen to their thoughts while they are trying to figure out their relationship...It's so cute and funny


My easy Pancit recipe

I was so happy to hear that my friend cooked my recipe from my last post chicken pot pie, she asked me if I could post another recipe.  So I thought about Pancit, I cooked that this weekend for my daughter's 20th birthday dinner. I had help on this one from my sis in law and I want to apologize to her before hand, I probably changed the recipe a lot. After cooking for my family for 22 yrs. I am now trying to find fast and simple ways to cook. My beautiful sister in law is Filipino and introduced this dish to us many years ago, her and my brother would cook lumpias on the side with this dish. I just served ready cooked egg rolls on the side. I love the meaning behind Pancit, which is Good Luck and Long Life and I thought it would be perfect for my daughter's dinner. Don't forget to have your favorite sauces on the side like sweet and sour sauce. I hope you enjoy this recipe.

Ingredients:
1 bag of Rice Noodles
1 cup of sliced celery
1 cup of shredded carrots
2 cups of diced chicken breast
2 cups of small cooked frozen shrimp ( fresh and large shrimp will do, just cook and set aside first)
Soy and Oyster Sauce ( there is a pancit seasoning packet you can use, have to buy at a Asian store)

( you can add snapped peas and shredded cabbage and other veggies, since I was making it for my daughter I did not add to many veggies)

I boiled water and took it off the stove and let the noodles soak until they were soft, I then drained and set them aside
I used soy and oyster sauce until I got the desired taste.

added the shrimp to veggies for a couple of minutes and then added the chicken

added the drained noodles and soy and oyster sauce til I got the desired taste

I quadrupled the recipe to fill 2 of these containers. I served with egg rolls and it was a delicious dinner.

My quick and easy chicken pot pie

I love the fall and making warm dinners, this chicken pot pie is one of my family's favorite and it only has 4 ingredients (excluding salt and pepper).

Skinless chicken breast
2 potatoes (cooked)
1 1/2 cups of frozen peas and carrots
1 can of cream of chicken

Pre heat oven to 375, I diced the chicken and then cooked them in a pan with oil, while that is cooking I dice the potatoes and then cook them in the microwave.
When the chicken is cooked I add the veggies ,potatoes and cream of chicken with one can of water to the pan. I stir all that together and add salt and pepper to taste. While that is cooking I line the bottom of the pie pan with the pie crust. I then add the chicken mixture into the pie crust and then lay the top layer of pie crust. I did cut slits to the top of the pie crust. Now all you have to do is bake until golden brown. I had a little chicken mixture left so I took out a can of biscuits and made those little chicken pot pies which came out delicious.

I have always liked to read, I first started off reading books from Danielle Steel and then I moved on to James Patterson. I was literally going down the list of books that they have published.
I was looking at the diverse list of books my sister was reading and I decided I needed to broaden my mind.
My sister posted on her Facebook page that she was reading "Gone Girl' so I told her that I downloaded it. I had already known that she was close to the end of the book, my sis can read books in 3 days. I on the other hand will need the whole month, because I am a tv show freak. Anyway, my sister's husband mentioned that we should start a book club and then we ran with it. We decided to add the wine because that is something that my 2 sisters were interested in and they introduced me to.... Moscato.
I love the sweetness of Moscato wine, but wine is another thing I need to open my mind to. All I know about wine is there is a red, white, sweet, dry, spicy, cheap and pricey.
I know the real reason I want this book club to succeed and that is.... I enjoy time with my sisters.
When we are together, (which is not very often)  we laugh our heads off.   That is the reason I used the word "Wacky", I want us to have fun, talk about the books that we will be reading and introduce a wine to the group once a month.  I created a Facebook group page for us and for group members, the page is for fun, information and a way of communicating to those members that can't make it out to a get together.
I have to admit that it is also something that is a little bit mine, something to do to change up my day to day routine. It's something to do with my sisters that shares our 2 interest . I can't wait for our first gathering because " Gone Girl" is a good book so far and I can't wait to listen to what others think about it. So I raise my glass to the Wacky Women, Wine and Books Club and I hope it's as enjoyable as I picture it will be.

Top Chef - Duels left me hungry and talking to myself

I watch a lot of television shows, some may say, " way to many".  I missed last nights Top Chef Duels , so since I recorded it I had the chance to watch it today with the hubby . The duel between these two chefs Art Smith who cooks classic southern cooking and Kevin Gillespie a modern southern chef, left me walking away from the tv talking to myself.
It has been a long time since I watched two chefs cook with so much respect for one another, I understood why Curtis Stone kept using the term southern gentlemen when he referred to them. I noticed in all Kevin's plates they had a light and airiness to them, they did not seem as heavy as Art's plates. Don't even get me started on Art Smith's cooking, his love for food and family just shows on his plates. I have never had chicken and dumplings but I literally wanted to jump in the bowl. It has been said many times that Art Smith makes the best fried chicken, well I now have added tasting Art Smith's fried chicken to my bucket list. I don't even have a bucket list so that is the first thing I am adding. He also made this 12 layer cake that his grandmother use to make, his grandmother would say that this cake could cure a heartbreak. The layers were 1/2 a inch thick and each of them covered in melted chocolate, I seriously noticed the judges eyes roll back and moan.
Kevin made these 2 plates that I still picture in my head but they were so modern that I can't find a way to describe them. The one that stuck in my head is his banana pudding that Art said," tasted like a piece of heaven". It was also a plate by his grandmother, she passed away while he was young so the recipe was not left behind. Kevin said that the reason he remembers her banana pudding was because he once ate the whole bowl. I could just tell by the way Kevin cooks that he puts his heart and soul into his plates and that he meticulously chooses his ingredients.
Well as you can tell, I enjoyed last nights duel. I walked away from the couch and said out loud, 
" that was good" like if I ate the plates myself.

Family time at Baffin Bay (Cast & Stay Cabins)


My family loves to spend a weekend out of the year at these cabins and we have been visiting them for close to 10 years. There are some years that I skip and stay home with my daughter Selena, this year I really needed the peace and relaxation of this place. I read a book that I downloaded on my tablet and have not found the time to read at home. I even walked the pier and did some fishing, my arthritis was acting up so walking the pier was quite the challenge. My family didn't even seem to mind the rain and it poured. On the second night, we had heavy rains which ended up causing a black out. It is funny how we could not come up with one scary story but trying made for some good laughs. It was really nice to take some time and unplug from everything, some of us had bad phone service so we had no choice. I did not mind it at all, it cleared my mind for awhile. I noticed as soon as I walked in the door of my home, I went into crazy, tired and frustrated mode. I miss the sound of the breeze and water, I wish I would have recorded that sound.

the first thing I like to do when I get to the cabins or just any motel that we stay at while on vacation is Lysol the beds and lay my king size sheet over the whole bed, I include covering their pillows. I then put my blanket and pillows so I can have a good nights rest without worrying about what I am sleeping on.
